Dear Wine Lover,

Cass Wines are made exclusively from Estate vines. The Rhone varieties on the Cass Estate are genetically pure clones, having gone through 8 years of rigorous testing by an agency of the French Government (ENTAV) prior to being approved for sale in California in 1999. Cass Vineyard is among the first in California to offer Estate wines from these select vines.

*Winemaker's Tasting Notes*
2005 Cass Estate Paso Robles Grenache Sale $24.89 Was $28.00
Grenache is always blended with another grape because the tannins in Grenache are naturally very low. Consequently, Grenache all by itself does not age well. You will often find it blended with Syrah and/or Mourvèdre. We were very happy with the nose and the flavors of the Grenache, so we tried blending it with a minimal amount of Mourvèdre to add spice and backbone to the Grenache. Think of it as a hearty Pinot, with lots of strawberry notes. Production: 599 cases
2005 Cass Estate Hacienda Paso Robles Mourvedre Sale $29.89 Was $34.00
Mourvedre is a variety with wonderful fruity characteristics. This Estate block is located directly in front of the Hacienda inhabited by my only vineyard employee who lives on site. He watches over this fruit more than any other variety in the vineyard.. Production: 449 cases
2004 Cass Estate Paso Robles Syrah Sale $32.89 Was $36.00
Deeply pigmented beautiful wine with lots of cherry and a very smooth finish. This Syrah is entirely clone 383. Food pairings include a variety of red-sauced pasta dishes, grilled meats (especially tri-tip!), wood-grilled pizza, and smoked gouda cheese.
2005 Cass Estate Paso Robles Cabernet Franc Sale $37.89 Was $42.00
The Cabernet Franc was harvested late in the vintage at full ripeness. The longer hang time resulted in concentrated flavor and structure in the wine. The ferment was punched down up to 4 times per day and pumped over when necessary. After 16 months aging in the barrel, the wine also received half that time aging in the bottle to ensure a wine ready to be enjoyed upon release.
2005 Cass Estate Rockin One Paso Robles Red Sale $37.89 Was $43.00
45% Syrah, 35% Mourvedre, & 20% Grenache This was the first vintage produced in our new winery facility. Stringent cropping was used on both Grenache and Mourvèdre, bringing the tons per acre down from an estimated 10-12 to 4 tons per acre. This resulted in improved color and concentration of the fruit. The different varieties were kept separate until blending. Cap management consisted of both punching down and pumping over as required by the ferment for optimum extraction. In addition to 16 months barrel aging, this wine also received further bottle aging for halve that time to ensure a market ready product upon release. Production: 449 cases
2006 Cass Estate Grown Paso Robles Viognier Sale $21.89 Was $24.00
This Estate Viognier was fermented and stored in stainless steel in order to allow the natural apricot and pear flavors to come out. We hand picked at first light in order to get the grapes as cold as possible into the winery. Winemaker Lood Kotze pressed the juice off the skins right way, leaving the juice at 48 degrees, perfect for minimizing bacterial growth, but not so cold as to inhibit the robust start of fermentation. Production: 549 cases
2006 Cass Estate Paso Robles Estate Cuvee Sale $24.89 Was $28.00
50% Marsanne, 25% Roussanne, & 25% Viognier This Estate Cuvée was fermented and stored in neutral oak barrels. This wine is a nice combination of white Rhônes that blends the floral character of the Viognier with the citrus of the Roussanne and the fruit flavors of the Marsanne. Production: 549 cases
